I don't fence foil or epee, so I can't speak to this being true of all the weapons, but I feel that because sabre is so fast, one or two touches that go against you can send you into a tailspin very, very quickly.
I don't see that quite as much as in foil or epee. Getting a ref to review a touch or arguing can gain you needed time to regroup and reassess; I've argued technicalities with a ref, while all I'm thinking about is what I can do differently to the opponent.

I love how they get so worked up over a point! I mean, yeah everything counts and you would be pleased to get something but come on! Keep your cool guys!
I see this a lot with Sabreists (or whatever they're called).
