I took the insides of the tomatoes and diced them seeds and all.
You won't even notice the seeds.

Of course yopu can use feta cheese. One of the joys of cooking is to experiment!
I think that would taste great.
when you put the tomato's in the pan, did you use a new tomato or the inside of the old tomato? and if you used the inside of the old tomato, how do you dice the watery seeds in the middle?
