Still having a love/hate relationship with this Brinkman "smoke-n-grill". Today, it was "love". Of course, it was 60 degrees out w/ no wind, so I guess I don't completely hate it!
This is a tribute to BBQ pit boys on you tube. The first channel I sub'd was theirs, so long ago.

  • @airtexaco This model Brinkman will require a bit more attention during the cooking process. Since the bottom is wide open (as you probably already know) it gets rather difficult to maintain & control a constant temp. Also, the charcoal will settle into it's own ash and might need a bit of attention as well. But all in all, it's not a bad smoker for the price.

  • The Brinkman is a good smoker only if it is modded. The main problem is the charcoal tray. When the charcoal burns, the ashes have nowhere to go and this in turns makes the temps very unstable. I used the "brinkman smoker mod" and now I use 50% less charcoal and have solid temps through-out smoking. Essentially your adding a grate 1.5 inches from the bottom of the charcoal pan for the coal to sit on. This gives the ash somehwere to go during burning.

  • I saw some mods and drilled some holes for ventilation but you are right about the ash... It makes a ton but I decided to be a purist =) Got about 4 more hours to go!
