Apple Foldovers

10 Honey Crisp Apples
1 cup light brown sugar
3 tablespoons flour
1 tablespoon cinnamon
½ stick of unsalted butter
2 tablespoons lemon juice
½ cup of water
2 packages of Pillsbury piecrust



Filling

Peel and core the apples and place in a skillet on a medium heat. Add the butter and lemon juice and brown sugar and stir. Once the brown sugar has melted down add the flour and cinnamon and stir well. Cook down until the apples become soft, if the brown sugar begins to caramelize to the bottom of the pan add a little water to it and stir it into the mixture.

Foldovers

Take the piecrust and roll it out with a rolling pin a few times just to make it a little thinner. Use a medium size mixing bowl to place on top of the pie crust and cut out 2 round crust and set aside, roll out the remaining dough to make another crust you should be able to get six foldovers out of each box of pie crust. Once the foldover crust is made add the filling and fold over the crust to create a half moon shape crimp the edges with a fork and puncture a few holes in the top of the foldover. After you have finished putting them together coat each one with a light layer of egg whites and sprinkle each one with a little cinnamon sugar. Place the foldovers in the oven for 15 to 20 minutes at 375 degrees until golden brown. Makes 12 servings.
