They do that on purpose so that it would keep it interesting. There really wouldn't be any point in watching the Anime if it is going to be the same as the Manga and you read it, and there really wouldn't be any point in reading the Manga if you saw the Anime already, if they were the same. If they keep the story seperate, then you're gonna watch and buy the books which = more profits for them. AND it keep it interesting ;)
