I may need to correct onething.
Some people use oil to make it crispy, I heard but not sasami oil b/c this oil has a strong flavor. It is not a good idea to use for tempura batter.
Also some people add beer or coke to the batter to make it crispy.
Carbonated soda or water make the tempura more crispy.
I hope this may help.

Chef Cheng was my favorite instructor and the BEST instructor at the CIA... this was the best kitchen class at the school... for all of u bad mouthing her... go and watch her cook!!!! her skills will seriously shut u up quickly!!!!

@cheez80 First of all shes Chinese , Tempura is Japanese. I am not sure if you are aware or not but they are 2 completely different countries with 2 different cultures ya ignorant fuck.
