    I love this video. Thank you. One question I have is what do you do to make 100% whole wheat sourdough??? I have found many recipes, but am still looking for something that works well for me.

    I do both these days. If I'm going to be in the house, I'll usually do stretch and fold. But if I'm going to be away for whatever reason while it's rising, I'll just knead it the traditional way.

    I love how you include/converse/listen to your daughter throughout the video. Reminded me of watching a challah braiding video where the woman scolds her 6 year old (who's filming for her) for interrupting with the observation that he's six, just like the number of dough strands... I'm glad you put your daughter first, and not the bread or your internet audience. : ) Make another baker out of her!

    Typically an 1.5 to 2.5 hours, depending on how chilly the house is. Colder = longer.
