I've got another ridiculously cheap, ultra healthy, and super simple meal idea for you today. It's veggies in a teriyaki-style sauce, served over short grain brown rice. Using a microwave and a rice cooker, this is something anyone can create in minutes with zero mess.

  • Great point about microwavable rice. I've never tried it before but it sounds like something that would be very handy especially if you live in a college dorm.

    I usually just make a big pot of rice at the beginning of the week that I can just keep re-heating and eating with veggies throughout the week. That cuts down on time and effort as well :)

    And yes...couscous is SUPER quick and easy and oh so delicious!

  • There's also the "instant" rice that you can cook on the stove in about 10 minutes. There is a brown rice version that I use when I'm in a hurry.

  • Great info with this video.  Costco has an amazing digital rice cooker for 30 bucks and it steams veggies like a mad man!

    Oh,and for those who want to pay more but spend less time cooking the rice, there is a really good microwaveable rice. Trader Joe's has an organic brown rice in a box with 3 pouches. It's in the frozen food section. It is also available in Whole Foods with the brand name Rice Expressions.

    3 minutes in the microwave and it's cooked to perfection.

    Anyway this looks dish looks delicious. Now I have to go make some rice and veggies! :-)
