that meens the walls and roof should be initially made with premade bricks that you have perfected through trial and error weigh your materials and mark each brick to note the exact amount required to resist cracking/weathering

ive been doing a little research on the earth oven and it seems the initial structure should be made entirely of bricks to release the moisture in the clay as well as creating a formed structure for the oven based on the placement of the foundation bricks allowing easy cleaning and space to cook in.

Many of the other folks I've read don't put a chimney pipe in their ovens. Was that part of the book you read?

Thank you for your question. Build Your Own Oven by Kiko Dezner gives a variety of options to ventilate smoke including a chimney.

maybe using a heavy natural bristle brush to sweep the ash out. If i recall my mother would use some kind of dry bushes that are common in mexico to sweep the ash and hot ambers out.

Thank you for your suggestion and I think the book mentions a wire brush with a long handle as an option. One of the problems I am having is that the walls are curved enough by the floor so it is hard to get in there to get the ashes out. I am going to add some clay to make the walls more flush.

Pretty cool. I suspect it should be left to dry longer. I don't know how long it would take to get all the moisture out of the thick walls. Perhaps letting it dry between layers would be good too. I'd really like to try this out at my cottage next summer. Thanks.

The book we used "How to Build an Earth Oven" says you can start a small fire to help the oven dry and then then begin baking which expedites the process. Since the oven is made of breathable, permeable surfaces it absorbs rain water so as I understand it it is an on going process. One of the things I like about homesteading is there are constant adjustments. Please let me know how your own oven turns out.
