this looks amazing, didn't know about the purple corn, we do that also in Colombia but i guess you forgot to mention that they chewed it just because the mills weren't existing, before many people helped braking the grains with their own teeth, but now it is my understanding that only one member of the community is the one doing this job. cheers.

i wish you guys had this in North Carolina! I am Peruvian and I've only had the sweet non alcoholic version of chicha and mazamorra which is a dessert made of purple corn too. This looks amazing!

I'm trying something simmilar. Do the enzymes from the saliva convert it to alcohol as well? I'm figuring there would be some sort of yeast present?

I wonder what they do with their large batches... There's no way he hires someone to sit around all day and spit in the corn.
