At Bull City Burger and Brewery, they make their hamburger buns and hotdog buns fresh twice everyday.
Their original recipe starts with fresh yeast, locally milled organic Lindley Mills flour and fresh potatoes. The bakers at BCBB hand roll and hand shape every bun that is served.
could you share the recipe ? and oven settings ? my guess is:
bread flour, water, eggs, vegetable oil, salt, sugar and yeast, and in the oven at 180°c with lots of steam for 12 to 15 min, but how much do they weight ? around 75gm ?
