Panzanella, an Italian bread salad, glorifies leftover bread with local produce -- tomatoes, cucumbers, celery, red onion and sweet bell pepper -- dressed with an olive oil vinaigrette.

  • @marboeus This is a good question. Panzanella evolved as a way of using up stale bread. Because it could be several days old and very dry and therefore hard to eat, cooks moistened the bread with water to soften and revive it. You could use fresh Italian bread instead and omit the soaking. The salad you create will be wonderful, I'm sure, but the texture will be entirely different compared to one made with the dried bread.
