there is no such thing called 'correct way of cutting fish' any sushi chef will know that, everyone's style is different, i work as sushi chef for over 7 years and i've seen many many different ways of cutting up fish

you didn't cut behind it's pectoral fins. you should cut behind it's pectoral fins, to separate the head, gills and pectoral fins, when they're altogether.
