part two, goes from bringing in the sap to boiling, to spoiling your kids, who will no longer accept store-bought. I tap 5 to 9 trees a year, and get a gallon to a gallon and a half of syrup. sap usually runs from the end of February to the beginning of April. Below freezing at night, above 40 and sunny in the daytime is best.
