There's a video of the same thing with a chicken.

It's basically the same kind of muscle reflex as the human eyes; if you turn your head rapidly, your eyes remain fixed in one point instead of having your vision go all blurry.

Cats and owls (and probably most hunting animals) have this wonderful quality. This is to make them better at hunting: even if they move they body, their head and eyes stay focused on their pray. otherwise they wouldn't hunt anything. Check this on YT Rotate your owl ;)
