  • 材料 豬手(切件)︰ 2隻 南乳麵豉醬︰ 1両 薑︰ 10片 陳皮︰ 2片 乾葱︰ 1茶匙 蒜茸︰ 1茶匙 調味料 紹酒︰少許 上湯︰ 4湯勺 鹽︰ 1茶匙 糖︰ 2茶匙 蠔油︰ 1湯匙 做法 1.燒熱一鍋水,下豬手汆水,然後用水洗淨,清除血水。 2.燒紅鑊,下三湯勺油,放薑片炸至金黃色,盛起薑片,倒去油分­。 3.爆香蒜茸、乾葱及陳皮,加南乳麵豉醬,灒酒同炒。 4.下豬手,加上湯、鹽、糖及蠔油,煮成醬汁。 5.將豬手連醬汁,放進瓦鍋內,以中火燜半小時即成。想醬汁更濃­稠,可下濕生粉芡。

  • @TheFoodTour :我都做過一排廚房,食市0既廚房唔同屋企廚房,廚師洗鑊,煮餸­都係用爐頭0既水喉,旺起黎果陣要用好多水,所以一定要長開,一­般黎講,只要個爐有師傅企,個水喉都會開住,除非個場好靜啦!!

  • @guqinfan You could buy the ingredients from China Town. My mom also good in cook the pig trotters.

    She usually use the ingredients called soy sauce ( 生抽,老抽 ) which are easy to buy from china shop there.
