I scuba dive as well. But, not all urchins contain a lot of gonads. Ive found huge urchins that didnt have any inside. Then, right next to those, I found smaller ones full of gonads, but again since they were so small it wasnt even worth the effort. So, I'm not sure if it depends of the season, location, species, or what. If its legal for you to take uchins where you suba, try opening one up and see what it contains. It would be a lot of work to collect enough to sell. Where do you live?

I really want to try a live urchin but we dont get them here :( Is it possible to cook it or would it taste better raw? Looks good how it is, plus handy to know how to eat it if im ever stranded on a beach :D

if you are careful you can grab them with your hands, but be careful of the spins as they are very brittle and will break off if they enter your skin. Plus they dont act like wood splinters, for they break up into smaller and smaller pieces. So you really have to dig them out. If you are going to be handling a lot of urchins its a good idea to used some gloves. Urchins with LONG spins you should used tongs and some scissors to cut the spins, then you can even touch them with your bare hands.
