This is by far the best method, set of instructions, video that I have found on this topic so far. I roasted red peppers last night and Rita's instructions are like clockwork. I particularly found the rolling into a swiss roll the peppers and dunking them in oil, to freeze, very charming, It has worked so well for me, I am now ready to roast every red pepper that comes my way!
