Google.. vhd usb boot windows 7 (same procedures for 2008 R2).
I have not done this.. but I remember reading the basics long ago..
Install to a VHD file, customize the USB driver load order.. (so usb gets loaded earlier than normal).
Then you create a bootable usb drive and copy the vhd.

This video's description is incorrect. At no point during the video is how to install Hyper-V Server onto a USB key explained.
It pretty much just shows you how to boot from a USB stick.
