A signature dessert from Sri Lanka that can be enjoyed warm or cold. Try the creamy, decadent pudding of jaggery and coconut, with a hint of cardomon, cinnamon and nutmeg and garnished with nuts. Yummmy!!!!

Ingredients: (Serves 6)
5 eggs
400 ml coconut milk (approx half coconut)
1 1/4 cup brown sugar / jaggery
pinch salt
pinch nutmeg
small piece (1") cinnamon
4 cardomon pods
chopped nuts of choice (almond, cashews) for garnish - optional

  • It was delicious so i enjoyed it a lot.

    I´m just unsure about the consistency. At the bottom it was wobbly like pudding but the rest was different. At the beginning i stired it with a machine so the eggs were a bit to frothy. Maybe that is the reason? Or did i left it for to long in the oven?

    Do you have a guess?

  • It sounds like the pudding was overcooked. Every oven is different, so the temps have to be adjusted slightly. Try it for less baking time, the next time. Also, you can just beat the eggs by hand with a whisk and it will taste good.
