learned a lot here from this especially the tendons in the legs very useful, can I just say that technically you should remove the watch and rings from your hands, I mean you've been in contact with raw meat well and good you will wash your hands but will you wash your watch?? I doubt it. just an observation..
Thank you for your really helpful video. Had just been presented with a brace of partridge and a brace of pheasant and should have been grateful. but had no idea what to do with them! Following your instructions, I was able to prepare all the birds in less than half an hour which i think is good going for a first time - now need to find a good recipee. Many thanks.
such a laborious technique ... you can skin a pheasant in 30 seconds, no need for a knife at all, with much less mess, I skinned a brace tonight in under a minute, I'm not showing off .. just saying this is too much work.
dont you ever keep the skin on?probably a bit too lean without ??
