Jamie Gruber, who is the executive chef and owner of the Market, did not go to culinary school. He has a degree in computer animation from the Art Institute of Atlanta.

But he's been cooking since he was about 7 years old. He remembers calling his grandmother, asking her how to make Tuna Helper from scratch, not the box. He made it for his family that night.

At 12, he was working in his first kitchen during summer vacation. At 14, he was washing dishes in a restaurant and four years later, he was running the kitchen.

Gruber opened the Market in a small strip mall off Manchester Expressway 10 years ago. He opened the First Avenue location in June, where he says business has been very good.

Online today, he demonstrates how to make Roasted Red Pepper Lump Crab Cakes with Salad Mix and Citrus Vinaigrette.

ROASTED RED PEPPER LUMP CRAB CAKES WITH SALAD MIX AND CITRUS VINAIGRETTE

1 roasted red pepper

1 pound lump crab meat

Mayonnaise

Panko bread crumbs

Salad mix

Olive oil

Balsamic vinegar

Citrus juice (mixture of lemon, lime, orange)

1 tablespoon Dijon mustard

Salt and pepper to taste

Clean crab meat of any shell fragments.

Dice roasted red pepper and fold them together into the crab meat. Add a scoop of mayonnaise and bread crumbs. Hand-mix together until firm, adding mayonnaise and bread crumbs as needed.

When the mixture is firm, mold into patties. They can be made up to two days in advance.

Put oil in a sauté pan over medium-high heat. Place the crab cakes in the pan. When they are golden brown, turn them over to brown the other side.

Remove from the pan and place on a plate.

In a metal bowl, whisk together two parts of olive oil, one part citrus juice, a splash of Balsamic vinegar and one tablespoon of Dijon mustard.

Toss the salad mix with the dressing and place on the plate next to the crab cakes.
