It has more to do with maintaining the nori crispy and dry when putting it with gohan (japanese rice), like sushi or onigiri (rice balls). Have you ever eaten a sushi that the nori is kinda mushy and has no more crunch to it? The toasting prevents that.

Hey great video. I recently started making my own sushi and my first few attempts came out surprisingly well. I wasn't aware,however, that you were supposed to toast the Nori. Is that why there was a slightly more apparent "fishy" /"sea" smell/taste to the nori itself than what I'd end up getting at a sushi restaurant? Or is it the product quality?

Toasted nori with a drizzle of flax oil is a delicious snack...like potato chips with a mild ocean flavor and so much healthier!!!
