    Heston's brilliant technique for perfect poached eggs WORKS PERFECTLY! Just cooked my Sunday Breakky poached egg a la Heston and without a doubt it's the BEST poached egg I've ever made. I never did like the taste of vinegar in my poached eggs so big hug to Heston.

    Been working on about 10 eggs now and have it down. Saucer in 3 liter pan (not upside down), 75-80 degrees centigrade water, one handed eggcracking over slotted ladle/spoon for losing the watery whites, 3,5 minute for M size eggs.. PERFECTION and very repeatable! Thanks Heston!

    For some reason when I try to do it the egg white does not stick around the egg yolk, it just runs off in the water, so I am left with just an egg yolk. Anyone know why?

    Great poached eggs but the up-side down plate meant the eggs rolled into the corner of the plate and saucepan, better to place plate in right side up.

    Only thing I'd change - don't put the saucer upside down; the egg slides to the side then. Instead, as another user pointed out, keep the saucer right side up.
