I have fallen in love with julia child after watching the movie julie and julia,I am in my kitchen all day making my beef bourguignon .Dying to say BON APPETIT to my Family.

I watched the movie Julie and Julia and it was sooooo good. I had no idea she was married and oh did her husband ever love her. Meryl Streep did an excellent job in that role.

All the variations in this recipe just goes to prove the old saw that, "There's more than one way to skim a sauce." Seriously, it's not bacon (and she boiled the bacon first to try to take out the smokey taste), anyway, it's fresh pork fat cut into lardon and sauteed. The reason she subbed bacon is because in the U.S., it's not always easy to find fresh pork fat.
