@envyii No you don't, when you add the rum, make sure the bananas and sauce is away from the area you are going to add the rum to, because the flambe will look better if the pan is dry. Just move it back and it should burn, if not, give it a tilt.
@triple44 In my experience it takes a bare flame to ignite the alcohol--I still can't get an electric burner to flambe' --and believe me I've TRIED. :-p
Spirits, even 100 proof really doesnt burn all that HOT. It's more a matter of being careful not to get in the way of the initial "flame-leap" it can get quite HIGH.
Also take care not to spill the burning booze. Ive flambe'ed hundreds of times, pouring the liquor straight in the pan while still on the burner, with never a mishap.
@LaoSoftware Well, I suppose it adds flavor and helps caramelize the bananas, and then there's the excitement of seeing your eyebrows get burned off...
