In partnership with FaveDiets, I needed to make a simple video on how to toast coconut. There are many commercial sweetened toasted coconuts, but I needed a low carb alternative for an upcoming video. This recipe would also go great on the low carb coconut cream pie I posted (http://www.youtube.com/watch?v=nDB1UcdwNdE). Stay tuned for the next video, you won't want to miss it.

Ingredients:
3 cups raw coconut
2 tbsp coconut oil
2 tsp Splenda
Makes 30+ 1 tbsp servings.

Nutrition Info per serving
28 Calories, 2.7g Fat, 1.2g Total Carbs (.7g Fiber), .2g Protein

  • OK Kent I got my box of Gurley's coconut today and am going to toast some and make those Scotcharoo's. How would you suggest I store all my other bags I got? Should I vacuum pack them in the bag and freeze them or take them out of the bags and then vacuum pack the loose coconut and freeze them? I assume coconut freezes ok. Also, to use this coconut in recipes should you always add coconut oil and let it get soft before putting it in the baked goods? Or can you use as it is?

  • @lgpars I store 3 bags on the upper shelf in my cupboard, and I can taste no difference from first to last bag. I'll probably use all 3 bags within 4 weeks or so, so it would depend on how long you plan to keep those six around. If you were thinking longer term (say 4 months), vacuum packing and freezing would be find.

    I hardly ever use coconut oil with the coconut except for when toasting it. The oil helped with getting it to brown overall and not burn. I just use it as is when baking.

  • What happened to your older videos like the one on induction and the before and after one.

  • @ruthc48 They are still all on here. I have over 200 videos posted here on Youtube, but you may need search for the titles.

  • Kent, is your unsweetened coconut moist and shredded in larger type pieces like the baking coconut you find in the store that is sweetened? I do not want that dry, very small stuff as I already have some of that. I looked at Amazon for the other brand you gave me and it looks just like what I have, even the medium flake. Yours does not look like that dry, rice looking kind.

  • @lgpars No, the stuff I use is large flakes, but they are dry on the outside like chips -- somewhat similar to wood chips. However, they do have water inside them. You can see in the video how much the flakes shrank during the toasting. It could be the more rice like ones have lost more of the moisture than the flakes have.

  • I went ahead and ordered the Gurley ones from their home site. I think they are more what I am looking for. This other stuff I have is almost like a flour they are so tiny and dry. A couple of baked goods I tried to make with them flopped because they just were not like flaked coconut.

  • Hey Kent, can you tell me where you purchase your Gurley's unsweetened coconut flakes? Is there a retail store that sells it or do you order online direct from Gurley's?
