INGREDIENTS IN THIS DISH:

1.5kg Butternut Pumpkin
1 Brown Onion
Salt and Pepper
Olive Oil
4 Cups of Chicken Stock (1 Litre)
Sour Cream (to serve, optional)


SERVES 4

Preparation Time: 5 minutes
Cooking Time: About 1 hour + time to reheat on stove


ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

  • Butternut pumpkin is butternut squash in the U.S., so I must admit I was confused when you called the butternut a pumpkin. Heck, when I read the title, I thought the soup had pumpkin AND butternut squash in it. It's so awesome that you can learn interesting things about other countrie's cultures and language from Youtube.

    Out of curiosity, what do Aussies call what we in America refer to as a pumpkin?

  • @PeeboTyson We call it pumpkin too. It's fun to learn the different names used around the world for things. I still get stuck on the whole American "jelly / jello" thing lol

  • By the way, we made this a while back- my dad mixed up the recipe (we added nutmeg and cinnimon, and brown sugar with chopped up pork pan fried with white pepper), but it was still amazing, thank you for giving him the idea!

  • This looks a little bit watery for me - I prefer my soups to be a bit thicker when I make them myself, but this still looks yummy so I think I'll be trying it out soon (with a little less stock)

  • In the UK it is called a Butternut Squash, and it makes an amazing soup. I like to make the soup with sweet potato added (Yam?) as they go so well together.
