Horrible belly filleting.

Water penetrates the flesh and in short time makes the meat mushy! Best method is to scrape the fillet with a clean knife to remove debris. If you have a ragged cut fillet then use a sharp knife to remove the ragged parts and then prepare for sashimi or for cooking. NO WATER to rinse the fillet...EVER!
