@Jumpybeaver YES! Pecans work beautifully. That's the nut I originally used for this cake. When I auditioned for MasterChef, I made the cake with pecans that my parents had picked from their tree and shelled. You're SO lucky that you have a pecan tree!

Just made my first simple genoise cake using your tips and it impressed my mom, and she did lots of cakes before! I just love baking because it's just like math to me, and I'm a math geek :P

i know you used 3 9" pans, i however only have 8" pans would i need to make this with 4 8" pans?
