Thank you thank you thank you. I love calamari but had always been afraid to grill it myself. I followed your directions and had the best dinner ever. I hope to get to your restuarant one day and taste the original.

Im surprised you clean your squid by sticking your fingers in. I usually just use my thumb on the closed tapered end and push it inside the squid. That turns it inside out and makes it very to wash and clean.

Why cut off the skates..they are delicious and get really nice crunchy...any good seafood restaurant on the Mediterranean, or Adriatic serves up the entire Calamari grilled whole...they do clean the insides but you do the pulling apart of things on your plate and eat what you see fit...I've eaten sea of Calamari during my years living in Europe....and its always done the same way in good seafood places...Im sure the recipe here tastes good but I dont see the point in all the disecting
