The point of killing something humanely is to reduce the suffering caused, and thats why it's different. As a note on this particular video, it seems the guy is doing the best he can.

I have to say, this is one of the best ways to kill fish, at least he's attempting spinal trauma, which disconnects the nervous system. Better than asphyxiation.
