In this video, Betty demonstrates how to make very basic (but super tasty) salmon cakes. This is a very easy recipe, inexpensive, quick, and healthy! You can't beat that!!!

Ingredients:

15.75 oz. can pink salmon (drained)
2 eggs, well beaten
2 tablespoons dried chopped onion
1/3 inner packet of saltine crackers, finely crushed
olive oil for sauteing

Beat the 2 eggs well. Add the drained salmon, 2 tablespoons dried chopped onion and the 1/3 inner packet of finely crushed saltine crackers. (You can crush the crackers by placing them in a zip-lock plastic bag, closing it, and going over the bag with a rolling pin, until all crackers are well crushed.) Stir these ingredients together until they are completely mixed. Put about 1 tablespoon of olive or other cooking oil into a skillet on the stove. Bring it to medium heat, and start adding the salmon cakes. You may drop them by spoonfuls, and flatten them out (quickest), or use your hands to form them into circular patties. Keep the heat at a level where the patties are frying well. Turn the patties as they become golden on the bottom side. It will only take about 5 minutes (or less) per side. Transfer the cooked salmon cakes to a tray with paper toweling to absorb any extra oil. Then, place the salmon cakes on a serving dish. Serve while hot! This is one of those recipes you've just got to have in your collection!

  • Since i have bread crumbs and judging by the volume in the zip lock i would estimate approx 1/2 cup of crackers or maybe a little less ? I have saltine's but I'd rather skip a step and use bread crumbs for mine. ill be cautious and mix it in slowly until it looks about the same consistency as your product.

  • Great basic salmon cakes, Betty! My mom makes essentially the same thing, but depending on who is going to be eating them, we sometimes add chopped green olives, pickles, celery, onion, capers, parsley, etc. I highly recommend olives. :]

  • Hope I'm not sounding rude and I don't know your age but is it wrong that at 28 yr old I find you highly attractive ? Almost every recipe I've looked up leads to your page and most recipes are so simple which I love. I mean the utmost respect on your beauty and your cooking so if your hubby gets a little jealous he can take it as a compliment. About ready go give these salmon patties a go for the first time. Nothing wrong with learning to cook while watching a beautiful women teach huh ?

  • @1970sarteaga I leave the bone in and the skin on. (I agree that the skin does look unappetizing, but it all gets mixed up and is never noticeable.

  • I luv salmon patties...yummm.

    With the salmon cakes u made did u leave in the bones that r n the middle or was that a sort of boneless salmon? I noticed u left the dark skin peel n it, I always take that out just cuz I don't like the look of it lol It disgusts me but I luv salmon. It's always time consuming 4 me tho cuz I try removing most of that bone in the middle of the salmon.

    Those look delcious! Now I am wanting salmon patties. I luv them with mustard w/homemade mac & chz & yam patties
