The characters must be so simplified that some kanji cannot appear as hanzi because they can't recognise it.

I think the reason there are question marks is actually an encoding issue. From what I can see, it looks like they actually copy-pasted the Japanese lyrics, rather than writing Chinese translations; the characters that show up are the ones shared between Chinese and Japanese in Unicode, while the Japanese-only kana are not recognized by the subtitle reader and thus all become question marks.

It's a bit of a long story. Yes, and no. Japanese has 3 kinds of writing systems, all of which were derived from Chinese characters, but the only the Kanji are still readable as Chinese characters. However, both Chinese Hanzi and Japanese Kanji simplified in different ways; IIRC Taiwan uses the most traditional characters, Kanji are a bit simplified, and PRC Chinese is heavily simplified.
