I had a customer order one of these the other night. I knew what it was but my bar doesnt stock peach puree so instead i used a single shot of peach schnapps with a dash of strawberry puree instead. Not quite the same but it worked a treat and the customer came back for them all night.

Hi! Here in Venice, when it's just damn hot in the summer, we use fresh peaches and crushed ice instead the puree... =)
Anyway this cocktail changes its name if you use different kind of fruit (Rossini-strawberry, Mimosa-orange, Tintoretto-pomegranate). Prosecco is an amazing sparkling wine, I prefer it to Champagne and not because I'm from Venice. It's more dry and refreshing. You could find it in every big cities of the world. Just try it. It's cheaper than Champagne, too. :D Ciao!
