Spanish Recipe shown step-by-step. Salt cod is one of my favorite elements of Spanish cuisine. Salting is a traditional way of preserving fish, and cod takes especially well to this as it obtains an excellent texture and flavor. You can't substitute fresh cod for salt cod.
