  • Wet burritos would be a more fitting name.

    I don't mean any disrespect, this looks appetizing in its own right, and great for anyone who doesn't know what an authentic enchilada looks or tastes like.

    I'm just wondering where some of these techniques originated that they now use in "Mexican" restaurants, which are not authentic.

    1. Flour tortilla (always use corn)

    2. Cheddar/Jack cheese (use queso fresco or ranchero)

    3. Baking (not the right procedure)

    4. Canned ingredients (Never! Go fresh!)

  • Enchiladas go over lettuce and are topped with sour cream. idk wht the heck this was, but you did a good job explaining it!

  • @lukeysmama I think it's a regional thing. I'm Texan, and we make them with corn, but I guess other parts of the U.S. makes them with flour. Yeah, we call them burritos if they are made with flour.

  • Have to agree, enchiladas are made with corn tortillas, otherwise, it is a burrito.

  • @gailgraham1 1. Lb Chicken - bake it - / Take 2/4ths and shred it 2. Add 4 ounces of softened cream cheese. 3. Add 1/2 cup salsa of your choice 4. 1/2 cup green diced chilis Drained 5. 1 tablespoons chopped jalapenos 6. 1/2 cup sour cream. 7. Six chopped green onions Mix everything together Stuff 10 shells with mixture - wrap Pour over sauce 1 cup mexican cheese, sprinkle over the top Oven at 350 - bake for 15-20 minutes.
