There is nothing quite like two eggs over light ,rye toast and Greek style home fries.I have duplicated the flavor of the potatoes served at quality diners.
Come on!! "Let them cook for 40 minutes?" I don't think the diner does that, seeing as how my order is ready in 15. I've watched them cook homefries, and they don't cover them either. These may be good but they sure aren't greek diner home fries!

Okay, Olive oil has a low smoke point meaning that it's impossible to cook any food in temperatures up to or above 350 to 400 degrees.

No greek uses butter to his fries, thats an insult :)) We use olive oil in bigger quantities tho....
