  • @metaspherz Not completely true. I used the same grinder on two machines one sub- $100 and one nearly $2k and the crema was much better on the $2k machine. FACT.

  • FACT: Crema results more from the proper grind than from the freshest bean or the best espresso machine. IMO 3 day old beans are suitable ONLY for drip coffee & dessert drinks. Espresso is out of the question. NOT all beans are ready for espresso even after 4-5 days. My Sumatra's don't reach their peak flavor for 7-14 days. But beans roast & degas differently. There isn't a hard fast rule how long it takes to reach peak, so without a very effecient burr mill it's all a waste of time & effort.

  • Ideal crema depends on the grinder NOT the bean! Don't believe coffee snobs that say ONLY the freshest roasted beans will produce the best crema. The most important factor in pulling ideal crema & flavor is to use a conical burr mill. Many experts agree that the espresso machine compliments the coffee grinder, not vice-versa. About $100 will get you a very good burr mill but NOT a great one. Using a cheap bladed spice mill with a Gaggia Platinum is like running a Lamborgini on regular gasoline.

  • Make sure your coffee is extremely fresh. 3 days after roast is good for most beans. You'll get much better crema that way. Don't buy beans in a grocery store if it has a "best by" date on it. Only buy beans that show the roast date on them, or order from a roaster online.

  • Just bought mine. Coming in the mail tomorrow! Can't wait!
