We'd like to present Healthy Korean Fusion Afternoon Tea recipes; Tri-Color Gyeongdan and Blue Saenggang Cha. Gyeongdan(경단) is a kind of DDeok(Korean rice cake.) It usually is served in the afternoon with Korean tea or the traditional drinks. Saenggang Cha(생강차) is the tea made from ginger root. It can be served hot or cold, depending on the situation. It helps blood circulation, stops coughing, and clears mucus.

Tri-Color Gyeongdan (SWEET RICE BALLS)
:Adapt from http://www.visitseoul.net . To make a healthy and interesting choice, we added pumpkin and green tea in the dough. Pumpkin was introduced to Korea in the 16th century. Pumpkin contains carotene, which is good for absorption of Vitamin A, and also helps reducing the swelling of pregnant women and treats patients with kidney ailments. Green tea can help regulating body temperature, blood sugar and promoting digestion.

Ingredients
Glutinous rice powder: 3 cups (separated them equally into 3 bowls)
Hot Water: As need, I would say about a cup or so.
Salt: Pinch
Green tea Powder: 1/2 tsp
Mashed pumpkin: 2 TBsp (If you are in Asia, it's alright to use your pumpkin. If you're in the West, I recommend you to use butternut squash, since the pumpkin in the West is quite different from the one in Korea. Butternut squash is taste much closer to pumpkin in Korea.)
Small Diced Jujube for coating
Coconut flakes for coating
Cake crump for coating

Method:
1. Mix salt and hot water into the 1st bowl. Knead till you get soft dough.
2. Do the same in the 2nd bowl of rice powder, and add green tea in water you mix in.
3. In the 3rd bowl, add mashed pumpkin first, then slowly add hot water, and knead till it soft. You don't need much water since the pumpkin is already very moist.
4. Make a half inch balls.
5. Put all the rice cake balls into boiling water. When the rice cake balls are cooked, they will float.
6. Put the cooked rice balls into cold water and drain them.
7. Roll the cooked rice balls in honey, cover them with your favorite coating, and transfer them to a plate.

Blue Saenggang Cha(생강차)
Adapt from http://asiansupper.com. To make a healthy and fun drink, we add Blue Pea in the recipe; make it pretty and a lot more fun to drink. Bright up your afternoon!!

Ingredients
Sliced ginger: 40 g
Water: 4 cups
Honey: to taste
Sliced lime: 2 each
Dried Blue pea: 2 tsp. ( If you're in Malaysia, Khmer, Thailand, Turkey, or India, it will be easy to find blue pea, if not, you can visit http://www.the-foodist.com/recipes/clitoria-ternatea-butterfly-pea-flower-tea... or http://www.amazon.com/Butterfly-Pea-Clitoria-Mariana-Tea/dp/B005HN474K.)

Method:
1. Boil ginger and water on the medium heat for 10 minutes.
2. Add dried blue pea and keep cooking for 5 more minutes.
3. Sieve the ginger and blue pea.
4. Add honey to taste.
5. You can serve it hot or cold.
6. Serve it with a slice of lime.
7. If you want to drink a blue ginger tea, go ahead. If you want a deep purple ginger tea, just add some lime juice and watch the tea's color change!

Critique of the dish: This afternoon tea set is very nice, both texture and flavor. Moreover, it's pretty. People says, we eat with eyes before we eat by mouth, and that's so true. Our niece wants to save it, since it's so lovely. Pumpkin in Gyeongdan gives a mild sweetness and green tea smell very good. For Saenggang Cha, the dried blue pea doesn't affect the taste; it only gives the beautiful color. Putting some lime juice in ginger tea may sound weird, but the result turns out nice and fresh.
