Peameal bacon is also sometimes known as Cornmeal bacon. If you've ever had it you know how delicious it is and why it has become not only a Canadian favorite but also a favorite around the world.

And whom do we have to thank for this delicacy? The man's name is William Davies, and he was an immigrant from England back in 1854. He started with a meat shop in the St Lawrence market selling cured ham and bacon and soon became very successful (1854 or 2011 people love fresh, good quality, delicious meat!). It's around that time, 1875, that he formulated Peameal bacon in the St Lawrence market in downtown Toronto. It was such a hit in Toronto that he started a company called the 'William Davies Company' where he began shipping his pork to England (by big wooden ship, not plane!) where they made his peameal bacon using his Canadian pork. It became a hit there as well.

Peameal bacon is a type bacon which was traditionally always rolled in ground, dried yellow peas; although nowadays, it is generally rolled in yellow cornmeal. It is low in fat, and slowly cured to bring out the flavor in the pea/cornmeal. It is very lean and has a delicious smoked flavor. If you've ever had it you know what it's all about and your mouth is probably watering all over your keyboard right now!

The GCAT crew sampled some extremely tasty peameal bacon sandwiches compliments of the Carousel Bakery while we were at the market. Next time there you'll have to try one -- you'll thank us ... and William Davies!

Lastly, if you've ever wondered where Toronto got it's nickname 'Hogtown' well now you've got your answer. William Davies and his delectable cured bacon, peameal bacon and other pork products were so popular that Toronto couldn't escape the moniker 'Hogtown!' And that is a GCAT fact - Oink Oink!
