...I wonder how can U cook a FRITTATA without any eggs? in ITALY frittata means everything u want but always with 2 or 3 eggs. anyway very skilful and cunning VICTORIA. I could never make it without eggs which R like glue to keep all ingredients together. clap clap.GIANNI ITALY

You're right. This dish was not named properly back when it was taught to Victoria by her sister-in-law Nettie in the Bronx in the 1940s. I suspect they named it such because it looks like a frittata even though it contains no eggs. What's important is how it tastes! Buon appetito.

Eggplant frittata is a low calorie meal because it fills you up -- you don't need anything else but the frittata. A guy could eat a whole one, and a woman could eat 50-75% of one depending on her height. By contrast, a Big Whopper is also 670 calories, but because of its higher caloric density it won't satisfy your hunger. If you order a Medium Fries to go with it, you'll add another 360 calories for a total of 1,030 versus 675 for the frittata. So eat the frittata instead!
