Adagio for Strings is played by... strings. The specific piece in this video, done by a choir, is generally known as 'Agnus Dei (based on Adagio for Strings)'.
It probably seems familiar because it's a popular piece in cinema (Lorenzo's Oil, The Scarlet Letter) as well as in a church setting.
