Its wheat flour (a fine one and 00 type) and water. dont enything else. just check for other vids on chinese noodles and you'll see how they are made from the beginning.
@sebastian: "regular" flour? Whats that? As far as I know, there is no regular or irregular flour. there is about 120 types of different sources for flour and ways to process it.
