In which Josie explains Riddling as practiced at L. Mawby.
Riddling (French: Remuage): The process of slowly and methodically turning a bottle of traditional method sparkling wine on its neck so that the sediments come to rest on the crown cap, in preparation for disgorgement. Traditionally done by hand, it is now common for wineries to use a "gyropalette", or a machine that can riddle metal boxes of several hundred bottles of wine at the same time -- this is what we have at L Mawby.

(Did you hear me mention the word "Champagne" in the video? We don't actually refer to our wines as "Champagnes", since only sparkling wines from the region in France of the same name should be called that. I was just making sure you were paying attention! ;) ~Josie)
