Udon noodles are said to have been brought to Japan by Buddhist priests who traveled to China; today they're popular worldwide, and are great in soups like this one during the cold winter months. In this recipe video from Veria Living learn to make a comforting Japanese recipe packed with goodness but not with calories. You can find most of the ingredients at natural food stores.

Ingredients:
1 tablespoon mirin (a Japanese cooking wine, available at specialty shops)
1 tablespoon soy sauce
1 (7-ounce) package fresh udon noodles
1 cup fresh spinach leaves, stemmed
2 small round fish cakes, thinly sliced into strips
1/4 (14-ounce) carton medium tofu in water, drained, cut into 1-inch squares about 1/4-inch thick
1 green onion, chopped

  • The soup looks really good! But what if you don't like spinach? What other greens would you suggest for this soup to take the place of the spinach?

  • @iceprincessice15 You could try experimenting. Rocket will add a peppery taste or cos lettuce will add a nice crunchy texture to the soup if you dont boil it too much. Let us know what you try...

  • Very informative ... thanks for posting it ... can u tell me where can I get sake for cooking soups and noodles, here in USA ? or if it is available online, which brand can i buy for cooking purposes only ? I am really confused about it as no one even seems to know what is Sake .. here ...

  • @ksinha9210 Good wine shops can be the best place to get hold of sake. It is worth having a look online though to get a good idea of the top brands as there is quite a gap between the good stuff and the cheap and cheerful Sake. Good luck in your hunt :-)

  • @veriawellness How can you make the broth if you cannot get hold of Bonito Flakes or Kombu? A cube fish stock instead? I know its not the same but I cannot get the more niche ingredients in time to make this.
