Music is much different than a speech. Most people listen the tune and do not pay attention to the hands.

when i have to hold my paper in my hands you can see it shaking really badly and people smirk at me and that leads to me just wanting to die, and audiences aren't always friendly

That's when i listen to someone present a paper i always resect it even if you get nervous. I usually try to cheer people up if they freeze and really want to listen.

Much of the educated audience are usually on the lookout for every little mistake you make.

Sorry to say, but some audiences are indeed just waiting to put down the speaker at every minor mistake with laughter. That's my own experience, and also what I've observed at fellow students' presentations at university. Personally I would rather have an unresponsive attitude from my listeners. It would make the mandatory presentations so much less painful to get out of the way.
