The fact that, in your scenario, the loser still has a good shot at the title, to me, makes the game lost some of it's importance. Now, if you lose a game like OU/UT, you are all but resigned to the FIesta or the Cotton. Nice bowls, but not the NC. Also, I think players from the schools you mentioned want to play for the title more than they want a playoff. Most may, however, advocate a Plus-1, which is likely the next step.
I'm sure, down the line, we'll be having some form of a playoff.

I suppose that players from schools like TU and Fresno St., who usually do well in their conferences and would have a good chance to play in this tournament, would like the idea of having a chance to become National Champions. But most players from big schools, I have heard, like the current format. I'm really curious if most people in favor of a playoff would change their minds if the players thought differently. Also, you have to concede that games like OU/UT lose some of their importance.

Not at all, and it's due to seeding. The higher ranked teams are going to be fighting for home seeding and with the fact that only two teams are going to be allowed from each conference it will make games such as UT/OU all that much more important.
Also I'm going to guess that players from UT, USC, TT, Etc. are not satisfied with current system.... IMHO
