when you let it set overnight in the salt, do you put it in refridge, or set out on counter?

@AngelikavonDeutschla I use it in place of regular relish in anything. Tuna, egg salad, sandwiches... etc. This last time I had melted some fresh mozzarella onto a hot dog bun, added a hot dog ( good quality one of course :P) and then put on the relish. It was DELISH! I just like the taste of Zucchini Relish more and you can't buy it so it's certainly worth making in my book!

@Rubydia What do you use Zuchini Relish for? I made from my many cucumbers, tomatoes and zuchini I made more like a cucumber relish.

I tried this recipe and it turned out wonderful i canned a dozen pints this summer and we have already demolished them down to only 3 pints left im going to try making zucchini pickles next thanks for the video :)

I wished you would have more videos. I wished we could communicate via Email. I have a small home stead behind our house. I do most of the garden my self, as my roomy works. i do cann most of my veggies too. And I do have a food pantry stocked up for emergency and rotate out of it. Thanks for this video! I'm going to look for more videos from you guys! Can I use a food processor and shred the Zucchini or does it need to be chopped? How would that effect the texture?

@Rubydia Yes you can shred it instead. That's how my aunt makes the recipe. It taste the same, we just prefer it diced.

This is an excellent tutorial! I make zucchini relish every year, though I shred my veggies and cut the sugar WAY back (just one cup). I also swap out some hot peppers for the green pepper to give it a *kick!*
I teach preserving at our community college, and I would just like to share that it is no longer considered safe to add corn starch (or flour) to canning recipes. It affects the pH and makes the environment less acidic, more hospitable to bad microbes and spores. Just FYI...

@renagade12 Yes you can leave the starch out if you want. The canning standards say not to can with corn starch anymore. Although the reason given is normally because it breaks down and gets runny. Many recipes such as pie fillings use Clear Jell and that's a modified corn starch for canning. A friend I have at an extension office in the USA told me they are working on relish recipes using clear jell to thicken it.

@JoyBugaloo67 Thanks, glad you liked the vid :) The hot peppers are a good idea, I might make some like that for dh.
I know that caning using flour and corn starch aren't advised. Although for the corn starch a friend that works at an extension office down there told me it was because it brakes down and gets running over time. I didn't know it effected the ph levels. I'll have to look into that thanks!
I normally follow the standards to the "T" but my aunts recipe is the one I bend a little
