Managing your diet is a crucial part of managing IBD many of us do not have the luxury of eating whatever we like simply because most foods can irritate the GI Tract. In my cooking series I am introducing tummy friendly foods in order to expand the diet that I am on. Hopefully you will find some tasty foods to expand your diet as well...soooo welcome to my kitchen as I make for the first time...

Fish Fingers:

1LB of deboned firm white fish or swordfish
1 egg beaten
pinch of salt and pepper
1 Cup Almond Flour
Oil for Frying

Cut the fish into finger lengths. Beat the egg, salt and pepper together in a bowl. Place the almond flour on a flat plate. Dip the fish into the egg and then into the almond flour turning it to cover all sides.

Pour some oil into a non-stick frying pan and heat until hot. Place the crumbed fish fingers into the frying pan and fry on all sides until golden brown. Serve with a wedge of lemon.

Perfect for a Friday Fish Fry! NOTE: this recipe contains almond flour! If you have a nut allergy, this recipe is not recommended.

  • good.. very simple recipe.. but maybe u can baked or grill it.. less oil :)
